Yellow Split Pea Dip

Description

This delicious dip makes a protein-rich lunch served with corn chips, vegetables, salad, or rice. Pack it for lunches. Add your favourite flavour changes, such as Frank’s RedHot. Let your taste buds be your guide. 


Ingredients

1 cup dried yellow split peas

1 bay leaf

2 cloves garlic (I use 1/4 to 1/2 teaspoon garlic powder)

1/4 cup sweet onion (finely chopped)

1 tablespoon white wine vinegar

1/4 teaspoon white pepper

1/4 teaspoon unrefined salt

1/4 cup extra virgin olive oil


Instructions

Rinse split peas several times. Add the peas to a saucepan with the bay leaf and cover with water to 2” above the peas. Bring to a boil, then cook the peas with the bay leaf until they start to fall apart (about 1 hour). Drain and discard the bay leaf.

Sauté onion and garlic, if using, until softened.

In a food processor, mince garlic and onion. Add peas, vinegar, salt and pepper, and puree until smooth. 

With the food processor motor still running, add olive oil and puree until smooth. 

Scrape into serving container and let cool. 

Let stand for one hour or cover and refrigerate for up to 24 hours. Bring to room temperature before serving. 

Notes

Use a cookie scoop to serve appetizer-sized servings of dip and crackers.

  1. This dip is phenomenal! It is paired great with crackers or veggies. It is perfect as a filling snack or even supper!
