Slow Cooker Apple Cinnamon Porridge

Description

This porridge, previously published in the 2023 spring issue of Prairies North Magazine, is always on my breakfast rotation. Recently, I tried making it with dried pears instead of apples, and it was delicious. 

I freeze small containers of this company-worthy porridge so I can enjoy a quick, healthy morning meal. One minute on high power in my microwave allows me to stir it. Another minute, and it is ready to serve. 

Add a few tablespoons of yogurt and some nuts to the cooked porridge to create a meal that will satisfy you for a full day. 


Ingredients

1 cup steel-cut oats

1 cup diced dried apples

1/3 cup raisins

2 tablespoons packed brown sugar

1 cinnamon stick

If you want to prepare ahead, place the oats, apples, raisins, sugar, and one cinnamon stick into a slow cooker and set aside.  

Fill a glass measuring cup with four cups of water, cover, and set aside. 

In the morning, or whenever you are ready to cook the porridge, pour the water into the dry ingredients, stir, and place the lid on the slow cooker. 

Cook the mixture for 2 to 2 ½ hours on low or until thickened. This makes 4 to 6 generous servings. Leftover porridge may be reheated in the microwave or frozen to reheat later.

Notes

This help-yourself porridge makes an excellent addition to a buffet breakfast. When I use my 2-litre slow cooker, the porridge is cooked in 2 ½ hours. I have an even smaller slow cooker, and the same recipe requires 3 1/2 hours.
